Delicious and fresh Vegan Beet Poke Bowl, with marinated beets. This gluten-free and vegan dish is so easy and perfect to make ahead and assemble in a hurry. If you’re more of a visual person, here’s the video for this recipe!
What’s a poke bowl?
Poké is one of the main dishes of Hawaiian cuisine, and literally means “cut” in Hawaiian. It consists of raw or cubed marinated fish. The spices used in the wine have no strong Japanese or Asian influence and the most common are soy sauce, chives and sesame oil. Recently, rice, noodles and other toppings like raw fruit or vegetables and seaweed were added to the poké and poké bowls were born!
For a switch, this recipe features marinated beet cubes instead of marinated fish. With their lovely colour and ability to absorb the amazing flavours of our marinades, beets are the perfect veggie to add to this vegan bowl.
Despite that, remember that beets aren’t a source of protein and I understand that you might want to pack your bowl with some more of this nutrient. So feel free to add some edamame, tofu or tempeh, to keep it plant-based, or the traditional cubed fish, so you end up with a bowl that meets your needs.
Some other toppings you could add to your beet poke bowl:
Base – Brown rice, jasmine rice, soba noodles, leafy greens.
Protein – Tofu or tempeh, fish or shrimp, edamame, nuts (peanuts, macadamia or cashews).
Veggies – sliced avocado, radish, jalapeños, scallions, sweet onion, shallots, watercress, shredded red cabbage.
Fruits – strawberries, watermelon, mango, raspberries, blueberries…
Pickles – pickled red onions, pickled ginger, pickled cucumber.
Other add-ons – toasted sesame seeds, fried or dried onions, chilli flakes, fried garlic

Vegan Beet Poke Bowl
Ingredients
Sushi rice
- Half cup sushi rice
- 2 tbsp rice vinegar
- 1 tbsp sugar
Marinated Beet
- 1 cooked beet
- 3 tbsp rice vinegar
- 2 tbsp soy sauce
- 1/4 tsp salt
- 1/4 tsp ground ginger or grated fresh ginger
- Half tbsp brown sugar
- Freshly ground pepper
Poké Bowl
- Half cucumber
- Half mango
- 1 avocado
- 2 tbsp fried/desiccated onions
- 2 tbsp roasted peanuts
- 2 tsp sesame seeds
- 1/2 nori sheet
Instructions
Prepare the rice
- Prepare the sushi rice according to the package instructions and let it cool.
- Add two tablespoons of rice vinegar and 1 tablespoon of sugar to a small bowl. Mix until the sugar dissolves and add to the cold sushi rice, involving to mix.
Prepare the beet
- Cut the cooked beet into cubes and add to a bowl.
- Mix three tablespoons of rice vinegar, two tablespoons of soy sauce, 1/4 teaspoon of salt, half a tablespoon of sugar or yellow sugar and some ground pepper.
- Add this marinade to the beet cubes, coat it well and let sit for an hour.
Prepare the bowls
- With the rice cold and the beetroot already marinated, let’s prepare the bowls.
- Add half the rice to each bowl as well as half the beet on top.
- Cut half a cucumber, half a ripe mango and an avocado into thin slices, and add them to the bowls.
- Add a tablespoon of dried or fried onion to each bowl, as well as a tablespoon of roasted and spicy peanuts and a tablespoon of sesame seeds.
- Cut half a Nori sheet into thin strips to garnish.
- Add more soy sauce or sweet and sour sauce, if desired.
