Vegan & healthy pinwheels, made with vegan feta cheese, sun-dried tomatoes, hummus, basil leaves, and avocado slices. This is the fourth recipe featured in my back to school video “healthy lunchbox ideas for work or school”, that you can find right here:
For this recipe, you’ll need:
Whole-grain tortillas: instead of flour tortillas made from enriched flour (a refined grain) look for whole-grain options. Just as with bread, whole-grain tortillas provide more fiber and a more complete package of nutrients and health-protecting plant compounds.
Hummus to spread: I would recommend a classic hummus, but you could also get adventurous with the flavors. we have two recipes here on the blog, and many more to come. This Sundried Tomato & Basil Hummus and this Green Goddess Hummus. Use whichever you have on hand or whichever you like!
Hemp seeds: for some high-quality protein and fiber. They are also very rich in two essential fatty acids, linoleic acid (omega-6) and alpha-linolenic acid (omega-3). Hemp seeds are also a great source of vitamin E and minerals.
Leafy veggies: of your liking, like spinach, arugula, kale, or lettuce. Dark green leafy vegetables are great sources of nutrition. They are rich in vitamins A, C, E, and K and are also rich in many of the B-vitamins. These veggies also have an abundance of carotenoids-antioxidants that protect cells and play roles in blocking the early stages of cancer.
Sun-dried tomatoes: jarred or dehydrated. If using dehydrated tomatoes, hydrate them in some warm water before using, to plump them up. Sun-dried tomatoes have an intense flavor that’s much stronger than fresh tomatoes, so a little goes a long way. You’ll need about 1 or two tomatoes for each tortilla, and try not to overdo the number of tomatoes since they are pretty salty. If you’re out of sun-dried tomatoes, you could also use olives to give the pinwheels their intense and salty flavor (and they match so well with the feta cheese).
Vegan feta cheese: again, a little goes a long way. Traditional Feta has a salty, tangy, flavor, a firm, yet creamy texture that lends itself well to crumbling and gets its characteristics from the regions around central Greece. If you would prefer milder taste pinwheels, you could replace the feta cheese with vegan mozzarella, ricotta, fresh cheese, or well-seasoned tofu.
Basil leaves: one of my favorite herbs, goes so well with the sun-dried tomatoes and the feta cheese.
Other toppings of your choice: avocado, sliced cucumber, olives (in case you’re out of sundried tomatoes).
Feta & Sun-Dried Tomatoes Pinwheels
- 1 whole-grain tortilla
- 3 tbsp hummus to spread
- 1 tbsp hemp seeds
- 1 handful leafy greens of your liking like spinach, arugula, kale or lettuce
- 1 or 2 sun-dried tomatoes per tortilla
- 15 to 20 g of vegan feta cheese
- 1/4 sliced avocado
- Place the tortilla on a flat surface and start by spreading the hummus on all of the tortilla’s surface.
- Add some hemp seeds for protein and fiber.
- Make a bed of leafy greens and add the basil leaves, the sun-dried tomatoes, crumbled feta cheese, and avocado slices.
- Now roll the tortilla as tight as you can, trying to glue the edge of the tortilla to the roll with the hummus.
- Cut the rolled tortilla into slices and enjoy!
You can sub the feta cheese with another type of white cheese or seasoned tofu.
If you don’t have sun-dried tomatoes roasted bell pepper or olives would also go well in this recipe.
