Vegan & healthy pinwheels, made with vegan feta cheese, sun-dried tomatoes, hummus, basil leaves, and avocado slices.

Ingredients
1whole-grain tortilla
3c. de sopahummus to spread
1c. de sopahemp seeds
1handful leafy greens of your likinglike spinach, arugula, kale or lettuce
1or 2 sun-dried tomatoesper tortilla
15 to 20gof vegan feta cheese
1/4sliced avocado
Instructions
Place the tortilla on a flat surface and start by spreading the hummus on all of the tortilla's surface.
Add some hemp seeds for protein and fiber.
Make a bed of leafy greens and add the basil leaves, the sun-dried tomatoes, crumbled feta cheese, and avocado slices.
Now roll the tortilla as tight as you can, trying to glue the edge of the tortilla to the roll with the hummus.
Cut the rolled tortilla into slices and enjoy!
Notes
Works best with classic flavored hummus.
You can sub the feta cheese with another type of white cheese or seasoned tofu.
If you don't have sun-dried tomatoes roasted bell pepper or olives would also go well in this recipe.
