Feta & Sun-Dried Tomatoes Pinwheels

Vegan & healthy pinwheels, made with vegan feta cheese, sun-dried tomatoes, hummus, basil leaves, and avocado slices.

Ingredients

  • 1 whole-grain tortilla
  • 3 c. de sopa hummus to spread
  • 1 c. de sopa hemp seeds
  • 1 handful leafy greens of your liking like spinach, arugula, kale or lettuce
  • 1 or 2 sun-dried tomatoes per tortilla
  • 15 to 20 g of vegan feta cheese
  • 1/4 sliced avocado

Instructions

  • Place the tortilla on a flat surface and start by spreading the hummus on all of the tortilla's surface.
  • Add some hemp seeds for protein and fiber.
  • Make a bed of leafy greens and add the basil leaves, the sun-dried tomatoes, crumbled feta cheese, and avocado slices.
  • Now roll the tortilla as tight as you can, trying to glue the edge of the tortilla to the roll with the hummus.
  • Cut the rolled tortilla into slices and enjoy!

Notes

Works best with classic flavored hummus.
You can sub the feta cheese with another type of white cheese or seasoned tofu.
If you don't have sun-dried tomatoes roasted bell pepper or olives would also go well in this recipe.
